Västerbotten Cheese History You can't find this cheese taste nowhere else in the world. The recipe was first developed during the sixteenth century and then refined in 1871 by a dairy women called Eleonora Lindström. So the Västerbotten cheese has had the same flavour since 1871. The cheese ripe for 10 months or longer berfore it's sold. An old Icelantic proverb says "Cultures are born and dies, but cheese is immortal"
